PR: So were your two main employers the Connaught and Whipps Cross? You say you were at Whipps Cross until you retired. How long were you at the Connaught?
ES: I was there for ten years.
PR: Ten years. And what were you doing there?
ES: I was in the catering. I used to do nights. I had to do nights.
PR: And what was the extent of the catering? Can you give me an idea of what a typical day might have been like there for you?
ES: You cook everything, all the pastries… And when the chef is ill, or so on, you know, you help. You help generally with the food and then I work in the dining room.
PR: So there was a team of you. How did you fit into that team?
ES: It was a shift team. You don’t work with the same people all the time. Everybody’s not on the same shift. And I mostly do nights.
